  • 2 cups fresh spinach leaves, roughly chopped
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice the sweet potatoes into cubes. Place them in a microwave-safe bowl with a splash of water and microwave for 5-6 minutes to soften slightly.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey, breaking it up with a wooden spoon, and cook until browned (about 6-8 minutes). Season with paprika, chili powder, oregano, salt, and pepper.
  4. Remove the turkey from the skillet and set aside. Add another tablespoon of olive oil, then sauté the onions, garlic, bell peppers, and spinach until softened and fragrant (about 5 minutes).
  5. Mix the cooked turkey and sautéed veggies together in the skillet. Stir in the chicken broth and simmer for 2 minutes.
  6. Grease a 9×13-inch baking dish and spread the softened sweet potatoes evenly on the bottom. Layer the turkey-veggie mixture on top.
  7. Sprinkle shredded mozzarella or cheddar cheese over the top.
  8. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Let the casserole rest for 5 minutes before serving.
