  • 1 lb lean ground turkey
  • 2 medium zucchini, thinly sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute, stirring to prevent burning.
  4. Add the ground turkey to the skillet. Break it up with a wooden spoon and cook until browned, about 6-8 minutes. Season with salt, pepper, and 1 teaspoon of Italian seasoning.
  5. Pour the tomato sauce into the skillet and stir to combine. Reduce the heat to low and let it simmer for 5 minutes to allow the flavors to meld.
  6. Meanwhile, slice the zucchini into thin rounds. Use a mandoline slicer for even slices if you have one.
  7. Spread a thin layer of the turkey and tomato mixture on the bottom of the prepared baking dish. Arrange a layer of zucchini slices on top.
  8. Repeat the layering process with the turkey mixture and zucchini until all ingredients are used, finishing with a layer of turkey on top.
  9. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  11. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
  12. Let the casserole rest for 5 minutes before serving. Enjoy!
