  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon turmeric
  • 1 medium zucchini, diced
  • 2 cups baby spinach
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, carrots, and celery. Sauté for 5 minutes until softened and fragrant.
  3. Stir in the garlic, ginger, and turmeric, cooking for another 1-2 minutes to release their aroma.
  4. Pour in the bone broth and bring to a gentle boil. Reduce to a simmer.
  5. Add the zucchini and cook for 10 minutes until tender.
  6. Stir in the baby spinach and cook for 2-3 minutes until wilted.
  7. Finish with a squeeze of fresh lemon juice, and season with salt and pepper to taste.
  8. Serve warm and enjoy!
