Honey Lavender Iced Tea

A refreshing and soothing iced tea infused with floral lavender and natural honey sweetness, perfect for summer sipping.

  • 3 black tea bags
  • 1 tablespoon dried culinary lavender buds
  • 1/4 cup honey (adjust to taste)
  • 2 tablespoons fresh lemon juice
  • 4 cups (1 liter) fresh filtered water
  • Ice cubes
  • Optional: fresh lavender sprigs for garnish
  • Optional: mint leaves

Instructions

  1. Bring 4 cups (1 liter) of fresh filtered water to a rolling boil in a saucepan or kettle (about 5 minutes).
  2. Place 3 black tea bags and 1 tablespoon dried lavender buds in a heatproof pitcher or large jar. Pour the hot water over them.
  3. Let the tea and lavender steep for 5 to 7 minutes, avoiding over-steeping to prevent bitterness.
  4. Remove tea bags and strain the tea through a fine mesh sieve to catch lavender buds.
  5. While the tea is still warm, stir in 1/4 cup (60 ml) honey until completely dissolved. Adjust sweetness as desired.
  6. Let the tea cool to room temperature, then stir in 2 tablespoons (30 ml) fresh lemon juice. Chill in the refrigerator for at least 1 hour.
  7. Serve over ice cubes and garnish with fresh lavender sprigs or mint leaves if desired.

Notes

Do not over-steep tea or lavender to avoid bitterness. Stir honey into warm tea for best dissolution. Use fresh lemon juice for optimal flavor. Strain carefully to avoid gritty bits. Can substitute green tea for black tea with shorter steeping time. For vegan option, replace honey with maple syrup or agave nectar.
