Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small saucepan, melt the butter over medium heat. Continue cooking until it turns golden brown and smells nutty, stirring frequently to prevent burning.
  3. Combine the graham cracker crumbs, sugar, and browned butter in a mixing bowl, stirring until evenly incorporated. Press the mixture firmly into the bottom of your baking pan. Bake for 8 minutes, then set aside to cool.
  4. In a mixing bowl, beat the softened cream cheese until smooth. Add the pumpkin puree, sugar, vanilla extract, cinnamon, nutmeg, and ginger, mixing until fully combined. Beat in the egg until the mixture is smooth and creamy.
  5. Pour the pumpkin cheesecake mixture over the cooled crust, spreading it evenly with a spatula. Tap the pan gently on the counter to remove any air bubbles.
  6. Bake the bars at 350°F (175°C) for 25-30 minutes, or until the cheesecake layer is set and slightly jiggles in the center. Allow them to cool completely at room temperature, then refrigerate for 2-3 hours before slicing.
  7. Slice into bars and serve chilled. Optionally, top with whipped cream, chopped nuts, or a drizzle of caramel.
