Irresistible Garlic Chicken Skillet with Gnocchi Recipe

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 16 oz potato gnocchi (store-bought or homemade)
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Season the chicken pieces with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes until browned and cooked through. Remove and set aside.
  2. In the same skillet, reduce the heat to medium and add 1 tablespoon of butter. Stir in the minced garlic and sautΓ© for 1-2 minutes until fragrant.
  3. Pour in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the pan. Bring the mixture to a gentle simmer.
  4. Stir in the gnocchi and let it cook for 6-8 minutes, stirring occasionally, until it’s tender and the sauce has thickened.
  5. Return the cooked chicken to the skillet and mix it into the gnocchi and sauce. Let everything simmer together for 2 minutes.
  6. Sprinkle freshly grated Parmesan cheese over the skillet and stir until it melts into the sauce.
  7. Turn off the heat and sprinkle chopped parsley over the dish. Serve hot and enjoy!

Notes

For a dairy-free alternative, use coconut milk or cashew cream instead of heavy cream. Add spinach or other vegetables for extra nutrition. Reheat leftovers gently with a splash of broth or cream to revive the sauce.
