  • 1 cup brewed coffee (strong, slightly cooled)
  • 1 teaspoon vanilla extract
  • Cocoa powder (for dusting)

Instructions

  1. Brew a cup of strong coffee or espresso and allow it to cool to room temperature.
  2. In a mixing bowl, combine pumpkin puree, pumpkin spice, granulated sugar, and vanilla extract. Mix until smooth and set aside.
  3. In a separate bowl, whip heavy cream with granulated sugar until soft peaks form.
  4. In another bowl, mix mascarpone cheese with granulated sugar and vanilla extract. Gently fold the whipped cream into the mascarpone mixture to create a light, airy texture.
  5. Briefly dip each ladyfinger into the cooled coffee. Avoid soaking them for too long to prevent sogginess.
  6. Assemble the parfaits by layering coffee-soaked ladyfingers, pumpkin mixture, and mascarpone mixture in parfait glasses. Repeat layers until the glass is full, ending with the mascarpone layer.
  7. Dust the top layer with cocoa powder for a classic tiramisu finish.
  8. Cover the parfait glasses with plastic wrap and refrigerate for at least 4 hours or overnight.
  9. Serve chilled with optional toppings like whipped cream, pumpkin spice, or crushed gingerbread cookies.
