Irresistible Sweet Potato Galette Recipe With Goat Cheese

  • 1 ¼ cups (160g) all-purpose flour
  • ½ cup (115g) unsalted butter, cold and cubed
  • ¼ tsp salt
  • 24 tbsp ice water
  • 2 medium sweet potatoes, peeled and thinly sliced
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 4 oz (115g) goat cheese, crumbled
  • 1 tbsp honey (optional, for added sweetness)
  • 1 tsp fresh thyme leaves
  • 1 egg, beaten (for egg wash)
  • 1 tbsp milk (to mix with the egg wash)

Instructions

  1. In a large bowl, combine the flour and salt. Add the cubed butter and use your fingertips or a pastry cutter to work it into the flour until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  2. Preheat your oven to 375°F (190°C). Toss the sweet potato slices with olive oil, salt, and pepper in a bowl. Spread them out on a baking sheet and roast for 15-20 minutes, or until tender but not fully cooked.
  3. On a lightly floured surface, roll out the chilled dough into a rough circle about 12 inches in diameter. Transfer it to a parchment-lined baking sheet.
  4. Arrange the roasted sweet potato slices in an overlapping pattern in the center of the dough, leaving a 2-inch border. Sprinkle the goat cheese evenly over the sweet potatoes. Drizzle with honey and sprinkle fresh thyme.
  5. Carefully fold the edges of the dough up over the filling, pleating as needed to create a rustic crust.
  6. Mix the beaten egg with milk and brush it over the crust for a golden finish.
  7. Place the galette in the oven and bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
  8. Let the galette cool for about 10 minutes before slicing and serving.
