Ingredients

  • Cooked turkey, shredded or sliced into thin strips
  • Cranberry sauce, homemade or store-bought
  • Rice paper wrappers
  • Carrots, peeled and julienned
  • Cucumber, thinly sliced
  • Fresh herbs (mint, cilantro, Thai basil)
  • Lettuce (butter or romaine), torn into small pieces
  • Optional dipping sauce: soy sauce, sesame oil, honey or hoisin

Instructions

  1. Prepare the ingredients: Shred cooked turkey into thin strips, julienne carrots and cucumber, tear lettuce into smaller pieces, and rinse herbs.
  2. Set up your rolling station: Fill a large bowl or shallow dish with warm water and lay a clean kitchen towel or non-stick plate nearby.
  3. Soak the rice paper: Submerge one rice paper wrapper in warm water for 10-15 seconds until soft and pliable.
  4. Assemble the spring rolls: Place softened rice paper on a towel or plate, add lettuce, turkey, cranberry sauce, julienned vegetables, and herbs in the center.
  5. Roll it up: Fold the sides inward, then roll tightly from bottom to top like a burrito. Repeat until all ingredients are used.
