  • 1 cup (230g) unsalted butter, softened
  • 1 cup (200g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 1 cup (250g) peanut butter
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 teaspoon (3g) baking soda
  • 2 cups (180g) old-fashioned oats
  • 1 cup (170g) mini chocolate chips
  • 1 cup (200g) M&M’s candies
  • Pinch of sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  3. Add the peanut butter, eggs, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and oats.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Fold in the mini chocolate chips and M&M’s candies, saving a handful of M&M’s for sprinkling on top.
  7. Spread the dough evenly into the prepared pan and sprinkle the reserved M&M’s on top for extra color.
  8. Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  9. Allow the bars to cool completely in the pan before lifting them out using the parchment paper. Slice into squares and enjoy!
