  • 8 ounces (225 grams) Brie cheese wheel (preferably creamy, triple-cream)
  • 3 tablespoons honey (raw or wildflower, preferably local)
  • 1/3 cup (40 grams) pecans, toasted lightly
  • 1 teaspoon fresh thyme (optional)
  • A pinch of ground cinnamon (optional)
  • Crackers or baguette slices for serving

Instructions

  1. Preheat oven to 350°F (175°C). Spread pecans evenly on a baking sheet and toast for 5-7 minutes, stirring halfway through. Remove and set aside to cool.
  2. Place the brie wheel in an oven-safe baking dish or small cast-iron skillet. Optionally, score the rind lightly in a crisscross pattern with a sharp knife.
  3. In a small bowl, stir together honey, fresh thyme leaves, and a pinch of cinnamon until blended. If skipping thyme and cinnamon, warm the honey slightly to loosen it.
  4. Pour the honey mixture over the top of the brie, spreading gently with a pastry brush or spoon. Sprinkle the toasted pecans evenly over the honey layer.
  5. Bake the brie for 12-15 minutes until soft to the touch but not melted out of shape. Watch closely to avoid overbaking.
  6. Remove from oven and transfer to a cooling rack. Let rest for 3-5 minutes to set slightly.
  7. Serve warm or at room temperature with crackers or toasted baguette slices. Optionally, add fresh grapes or figs on the side.

Notes

Do not peel the rind off the brie to maintain texture and shape. Watch pecans closely while toasting to avoid burning. Warm honey slightly if too thick for easier spreading. Rest baked brie before serving to prevent spilling molten cheese. Gluten-free crackers or fruit slices can be used for gluten-free diets. Variations include swapping nuts, adding spices, or using vegan cheese alternatives.
