Ingredients

  • Bone-in fully cooked ham (about 8-10 pounds / 3.6-4.5 kg), preferably spiral-sliced
  • Honey (½ cup / 120 ml), raw or wildflower
  • Dijon mustard (¼ cup / 60 ml)
  • Whole-grain mustard (2 tablespoons / 30 ml)
  • Brown sugar (¼ cup / 50 grams)
  • Apple cider vinegar (2 tablespoons / 30 ml)
  • Garlic powder (1 teaspoon / 5 grams)
  • Ground black pepper (½ teaspoon / 2 grams), freshly cracked if possible
  • Ground cloves (⅛ teaspoon / a pinch), optional
  • Water (½ cup / 120 ml)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove the ham from packaging and place it cut side down in your roasting pan. Score the surface in a diamond pattern about ½ inch (1.3 cm) deep.
  3. In a bowl, whisk together honey, Dijon mustard, whole-grain mustard, brown sugar, apple cider vinegar, garlic powder, black pepper, and cloves until smooth and glossy.
  4. Add ½ cup (120 ml) water to the bottom of the roasting pan to keep the ham moist during baking.
  5. Bake uncovered for about 1 hour 15 minutes (15 minutes per pound), basting every 15 minutes with the honey mustard glaze using a basting brush.
  6. Use a meat thermometer inserted into the thickest part of the ham (avoiding bone) to check internal temperature. When it reaches 140°F (60°C), remove from oven.
  7. Tent the ham loosely with foil and let it rest for 10-15 minutes before carving.
  8. Slice thinly along the natural spiral cuts if using a spiral-sliced ham, or carve into thick slabs for a rustic touch.

Use a high-quality honey like local or wildflower for best flavor. Score the ham to help glaze penetrate. Baste every 15 minutes for a glossy, caramelized crust. Let the ham rest before carving to keep it juicy. If glaze thickens, thin with warm water before brushing. For gluten-free, ensure mustard and ham are certified gluten-free.
