A quick and easy summer BBQ recipe featuring fresh corn grilled to perfection and slathered with a flavorful herb butter blend of parsley, chives, garlic, and lemon zest.

  • 4 ears fresh corn on the cob, husks removed
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 small clove garlic, minced
  • 1 teaspoon lemon zest
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Optional: pinch of smoked paprika

Instructions

  1. In a small bowl, combine softened butter, parsley, chives, minced garlic, lemon zest, salt, and black pepper. Mix until well blended. (Let butter soften at room temperature for about 30 minutes before mixing for easy blending.)
  2. Remove husks and silk from each ear of corn. Rinse under cold water and pat dry.
  3. Preheat grill to medium-high heat (about 375-450°F). If using charcoal, wait until coals are glowing red with a light layer of ash.
  4. Place ears directly on the grill grates. Cook for 10-15 minutes, turning every 2-3 minutes until even char marks appear and kernels are tender and juicy.
  5. Remove corn from grill and immediately brush or spread the herb butter all over while the corn is still hot to allow it to melt into every crevice.
  6. Sprinkle a tiny pinch of smoked paprika if desired. Serve hot.

Notes

For softer corn, wrap ears in foil with a pat of herb butter inside before grilling to steam gently. If fresh herbs are unavailable, use dried herbs at half the quantity. For dairy-free, substitute butter with vegan margarine or olive oil spread. Turning corn frequently prevents burning and ensures even cooking. Avoid microwaving leftovers to prevent tough kernels; reheat wrapped in foil on grill or oven.
