  • 6 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced

  • 1/2 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Using kitchen shears, carefully cut down the top of each lobster shell, stopping just before the tail fin. Pry the shell open gently and lift the lobster meat, resting it on top of the shell.
  3. In a small bowl, combine softened unsalted butter, minced garlic, chopped parsley, lemon juice, smoked paprika (if using), salt, and pepper. Mix well until smooth and fragrant.
  4. Brush the lobster meat generously with the garlic herb butter mixture, saving a little for basting halfway through cooking.
  5. Place the lobster tails on a baking sheet skin side down. Brush the shells lightly with olive oil.
  6. Bake in the preheated oven for 12-15 minutes, checking at 12 minutes to avoid overcooking. The meat should be opaque and firm but still juicy.
  7. Halfway through cooking, brush the lobster meat with the remaining garlic herb butter.
  8. Remove from the oven and let rest for 2-3 minutes to allow juices to redistribute.
  9. Serve immediately with a sprinkle of fresh parsley and an extra wedge of lemon.

Do not overcook lobster tails to avoid rubbery texture. Use softened butter for better absorption of garlic and herbs. Let lobster rest after baking to keep meat tender. For extra browning, broil 1-2 minutes at the end but watch carefully. Can be grilled as an alternative cooking method.
