Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  4. Mix in the peanut butter, egg, and vanilla extract until fully combined. Scrape down the sides of the bowl as needed.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing.
  6. Use a cookie scoop or tablespoon to form dough balls. Place them 2 inches apart on the prepared baking sheets.
  7. Gently press the dough balls down with the back of a fork, creating a crisscross pattern.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. The centers will appear soft but will set as they cool.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack.

Notes
