  • ½ cup (118 ml) heavy cream
  • 2 tbsp unsalted butter, melted
  • 1 tsp pure vanilla extract
  • ½ tsp flaky sea salt (plus extra for garnish)

Instructions

  1. Make the crust: In a large bowl, whisk together the flour and salt. Add the chilled butter and cut it into the flour using a pastry cutter (or forks) until the mixture resembles coarse crumbs. Slowly add the ice water, one tablespoon at a time, mixing gently until the dough comes together. Form into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
  2. Roll out the dough: On a lightly floured surface, roll out the dough to fit your 9-inch pie dish. Carefully transfer the dough to the dish, trim any excess, and crimp the edges. Chill the crust while you prepare the filling.
  3. Preheat the oven: Set your oven to 375°F (190°C).
  4. Prepare the filling: In a mixing bowl, whisk together the honey, sugar, eggs, heavy cream, melted butter, vanilla, and sea salt until smooth and well combined.
  5. Assemble the pie: Pour the filling into the chilled crust, smoothing the top with a spatula if needed.
  6. Bake: Place the pie in the oven and bake for 40–45 minutes, or until the filling is set but still slightly wobbly in the center. Rotate the pie halfway through for even baking.
  7. Cool: Let the pie cool completely on a wire rack before serving. This allows the filling to set properly.
