  • 2 teaspoons cornstarch
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 4 cups broccoli florets, washed and trimmed

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar or honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup beef broth or water
  • 1 teaspoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Slice 1 pound of flank steak into thin strips against the grain, about 1/4 inch thick.
  2. In a bowl, combine sliced beef with 2 teaspoons cornstarch, 1 tablespoon soy sauce, and 1 teaspoon sesame oil. Toss well and let sit for 10-15 minutes.
  3. In a separate bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 tablespoon brown sugar, 2 cloves minced garlic, 1 teaspoon grated ginger, and 1/4 cup beef broth. Set aside.
  4. Mix 1 teaspoon cornstarch with 2 tablespoons water in a small bowl to create a slurry.
  5. Heat 1 tablespoon vegetable oil in a wok or skillet over medium-high heat. Add 4 cups broccoli florets and stir-fry for 3-4 minutes until bright green and just tender but still crisp. Remove broccoli and set aside.
  6. Add more oil if needed, then add marinated beef in a single layer. Let sear without stirring for 1 minute, then stir-fry for 2-3 minutes until mostly cooked but still juicy.
  7. Pour prepared sauce over beef, stirring to coat evenly. Let bubble for 1 minute, then stir in cornstarch slurry to thicken the sauce.
  8. Once sauce thickens (about 30 seconds), return broccoli to pan and toss everything together for another minute.
  9. Taste and adjust seasoning if needed. Finish with a drizzle of sesame oil. Serve hot over steamed rice or noodles.

Notes

For gluten-free, substitute soy sauce with tamari and oyster sauce with a gluten-free alternative. Brown sugar can be replaced with maple syrup or coconut sugar. Avoid overcrowding the pan to ensure proper searing. Cook beef in batches if needed. Add toasted sesame seeds on top for extra crunch.
