Refreshing Raspberry Mojito Cocktail

A quick and easy raspberry mojito cocktail combining fresh raspberries, zesty lime, and cool mint leaves for a perfect summer refreshment.

Ingredients

  • Β½ cup fresh raspberries (about 75g), washed
  • 1012 fresh mint leaves, gently bruised
  • 1 large lime, cut into wedges
  • 2 ounces (60 ml) white rum per serving
  • 1 tablespoon sugar (or simple syrup or agave nectar)
  • 4 ounces (120 ml) soda water per glass, chilled
  • Ice cubes, plenty to fill the glass
  • Optional: splash of raspberry liqueur
  • Optional: fresh berries for garnish
  • Optional: mint sprigs for garnish

Instructions

  1. Place fresh mint leaves and lime wedges into a highball glass. Gently muddle for 20-30 seconds to release oils and juice without pulverizing the leaves.
  2. Add fresh raspberries and sugar. Muddle gently to break the berries and dissolve the sugar, releasing raspberry juice.
  3. Pour in 2 ounces (60 ml) of white rum and stir gently to combine flavors.
  4. Fill the glass almost to the top with ice cubes to chill the drink.
  5. Slowly pour about 4 ounces (120 ml) of chilled soda water over the ice. Stir gently once more to mix without losing bubbles.
  6. Garnish with a sprig of fresh mint and a few whole raspberries. Insert a straw and serve immediately.

Notes

Chill raspberries and mint beforehand to prevent tearing mint leaves. Avoid over-muddling lime to prevent bitterness. Use raw cane or coconut sugar for deeper flavor. Stir gently after adding soda water to keep bubbles. Can omit rum for a mocktail version by adding extra soda water or raspberry juice.
