Ingredients

Scale
  • 2 cups (about 300g) shredded cooked chicken (rotisserie chicken recommended)
  • 8 oz (227g) cream cheese, softened
  • 1/2 cup (120ml) buffalo wing sauce (Frank’s RedHot recommended)
  • 1/2 cup (75g) blue cheese crumbles (small-curd variety preferred)
  • 1/2 cup (120ml) sour cream
  • 1 cup (100g) shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Black pepper to taste
  • 2 tablespoons chopped green onions (optional)
  • Celery sticks or tortilla chips for serving

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. Soften the cream cheese by leaving it out at room temperature for about 30 minutes or microwaving in 10-second bursts until just soft (not melted).
  3. In a large mixing bowl, whip the cream cheese with a hand mixer until creamy and lump-free, about 2 minutes.
  4. Add the sour cream, buffalo wing sauce, garlic powder, onion powder, and black pepper to the whipped cream cheese. Mix on medium speed for 1-2 minutes until fully combined.
  5. Fold in the shredded chicken and shredded cheddar cheese using a spatula, ensuring the chicken is evenly coated.
  6. Transfer half of the dip into the prepared baking dish and spread evenly.
  7. Sprinkle half of the blue cheese crumbles evenly over the dip layer.
  8. Spread the remaining dip on top and dot the remaining blue cheese crumbles on the surface. Gently swirl the blue cheese into the top layer with the back of a spoon or knife.
  9. Bake for 25-30 minutes or until bubbly around the edges and lightly golden on top.
  10. Remove from oven and let cool for 5 minutes before serving.
  11. Garnish with chopped green onions if desired.
  12. Serve warm with celery sticks, tortilla chips, or your favorite dippers.

Notes

Use warm shredded chicken for better mixing and texture. Soften cream cheese thoroughly for a smooth dip. Bake uncovered for a golden bubbly top. If dip is too thick after baking, stir in a tablespoon or two of milk or extra buffalo sauce. Adding fresh lemon juice before baking brightens the flavor. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
