  • 4 large bell peppers (red, yellow, or orange)
  • 2 cups shredded cooked chicken (rotisserie chicken recommended)
  • ½ cup buffalo sauce (Frank’s RedHot recommended)
  • 4 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • ½ cup blue cheese crumbles (optional)
  • 2 stalks green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and cut the tops off the bell peppers, then remove seeds and membranes. Set aside the tops for later or chop them for the filling if desired.
  3. Lightly brush the outside of each pepper with olive oil and place them upright in a baking dish. Roast for 10 minutes to soften slightly.
  4. In a medium bowl, combine shredded chicken, buffalo sauce, softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Stir until creamy and well combined. Fold in blue cheese crumbles or chopped pepper tops if using.
  5. Using a spoon or ice cream scoop, fill each pepper cavity generously with the buffalo chicken mixture.
  6. Return the stuffed peppers to the oven and bake uncovered for 20-25 minutes until the filling is hot and bubbly and the cheese is melted and slightly golden.
  7. Remove from oven and sprinkle sliced green onions on top. Let cool for a few minutes before serving.

If peppers brown too quickly, loosely cover with foil halfway through baking. Adjust buffalo sauce amount to suit heat preference. Softening cream cheese before mixing avoids clumps.
