  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 cup low sodium chicken broth

Instructions

  1. Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions (usually 9-11 minutes) until al dente. Reserve 1/2 cup pasta water, then drain pasta and set aside.
  2. While pasta cooks, pat dry shrimp to ensure they sear nicely. Season lightly with salt and pepper.
  3. Heat butter and olive oil over medium heat in a large skillet. Add minced garlic and cook gently for 1-2 minutes until fragrant and golden but not browned.
  4. Add shrimp to the garlic butter mixture in a single layer. Cook for about 2 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
  5. Pour chicken broth into the same skillet and bring to a simmer. Scrape up any browned bits from the pan bottom.
  6. Pour in heavy cream and stir gently.
  7. Stir in freshly grated Parmesan until melted and sauce thickens slightly (about 3-4 minutes). Add lemon juice and red pepper flakes if using. Taste and adjust salt and pepper as needed.
  8. Return shrimp to the skillet, then add drained pasta. Toss everything together, adding reserved pasta water little by little if sauce needs loosening.
  9. Sprinkle chopped fresh parsley over the top. Serve immediately while warm and creamy.

Do not overcrowd the pan when cooking shrimp to ensure a good sear. Cook garlic gently to avoid burning and bitterness. Reserve pasta water to loosen sauce if needed. Freshly grated Parmesan and fresh lemon juice enhance flavor. For dairy-free, substitute heavy cream with coconut cream and Parmesan with vegan cheese or nutritional yeast.
