  • 1 medium yellow onion, finely chopped
  • 1 small green bell pepper, finely diced (optional)
  • 2 garlic cloves, minced
  • 1/2 cup (120ml) ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 4 to 6 brioche buns
  • 2 tablespoons butter (optional, for toasting buns)

Instructions

  1. Finely chop the yellow onion and green bell pepper, and mince the garlic cloves.
  2. Heat a large skillet over medium-high heat. Add the ground beef and brown it, breaking it apart with a spoon, for about 5 to 7 minutes until no longer pink and slightly crusty.
  3. Drain excess fat, leaving about one tablespoon in the pan for flavor.
  4. Add the chopped onions and bell pepper to the skillet with the beef. Cook for 4 to 5 minutes until softened and fragrant, stirring occasionally.
  5. Stir in the minced garlic and cook for 30 seconds until aromatic.
  6. Add ketchup, tomato paste, Worcestershire sauce, Dijon mustard, brown sugar, smoked paprika, salt, and pepper. Stir until well combined.
  7. Reduce heat to low and simmer the mixture gently for 10 to 15 minutes, stirring occasionally to prevent sticking and to thicken the sauce.
  8. While the sauce simmers, melt butter in a separate pan over medium heat and toast the brioche buns cut-side down for 1 to 2 minutes until golden and slightly crisp (optional but recommended).
  9. Spoon a generous amount of the sloppy joe mixture onto each toasted brioche bun bottom, then top with the bun lid.
  10. Serve immediately while buns are warm and filling is hot and juicy.

Notes

If sauce is too thick, add a splash of water or beef broth. If too thin, simmer longer uncovered. Toasting buns with butter prevents sogginess and adds flavor. For gluten-free, use gluten-free buns or lettuce wraps. For vegetarian, substitute ground beef with crumbled tempeh or plant-based beef.
