  • ½ cup (110g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon distilled white vinegar
  • ½ cup (120ml) buttermilk (or milk + 1 teaspoon lemon juice/vinegar)
  • 1 to 2 teaspoons gel green food coloring
  • 8 oz (226g) cream cheese, softened
  • 1 cup (120g) powdered sugar, sifted
  • 4 tablespoons (56g) unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then add vanilla extract and distilled white vinegar.
  5. Alternately add the dry flour mixture and buttermilk to the wet ingredients, beginning and ending with the flour mixture. Mix gently until just combined.
  6. Mix in gel green food coloring until dough reaches a vibrant green color.
  7. In a separate bowl, beat cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
  8. Scoop about 2 tablespoons (30g) of dough, flatten slightly, place about 1 teaspoon of cream cheese filling in the center, then top with another flattened 2 tablespoon scoop. Seal edges gently and place on baking sheet about 2 inches apart.
  9. Bake for 12-14 minutes, until edges are set but centers look slightly soft.
  10. Let cookies cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.

Notes

If dough is too sticky, chill for 15 minutes before shaping. Chill cream cheese filling if it softens too much during baking. Use gel food coloring for vibrant color without affecting dough consistency. Seal edges well to prevent filling leaks. Watch baking time closely to keep cookies soft and chewy.
