  • 34 pounds chuck roast, trimmed of excess fat
  • 45 large carrots, peeled and cut into chunks
  • 45 medium-sized potatoes, halved (Yukon Gold or red potatoes)
  • 2 large onions, quartered
  • 2 cups beef broth (low-sodium)
  • 34 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons olive oil
  • Salt, pepper, dried thyme, and rosemary to taste
  • 2 tablespoons cornstarch (optional, for thickening the gravy)

Instructions

  1. Peel and chop the carrots, halve the potatoes, and quarter the onions. Mince the garlic and set everything aside.
  2. Rub the chuck roast generously with salt, pepper, thyme, and rosemary.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides for about 2-3 minutes per side, until browned.
  4. Add the vegetables to the bottom of the crock pot. Place the seared roast on top.
  5. Pour beef broth, Worcestershire sauce, and minced garlic over the roast and vegetables.
  6. Cover and cook on low for 8-10 hours or high for 4-5 hours. The meat should be fork-tender, and the vegetables soft.
  7. Remove the roast and vegetables, leaving the liquid in the crock pot. Mix 2 tablespoons of cornstarch with 2 tablespoons of water, then whisk into the liquid. Cook on high until thickened.
  8. Slice the roast and serve with the vegetables and gravy.
