  • 2 pounds boneless, skinless chicken breasts or thighs, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced thinly
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning (homemade or store-bought)
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 cup chicken broth
  • 810 tortillas (flour or corn, warmed)
  • Optional toppings: sour cream, guacamole, shredded cheese, salsa, chopped cilantro

Instructions

  1. Slice the chicken breasts or thighs into thin strips, about 1/2 inch wide.
  2. In a bowl, toss the chicken strips with olive oil and fajita seasoning until evenly coated.
  3. Add the sliced bell peppers and onions to the bottom of your slow cooker. Sprinkle minced garlic over the top.
  4. Place the seasoned chicken on top of the veggies.
  5. Pour in the chicken broth and squeeze fresh lime juice over the chicken.
  6. Cover and cook on low for 6-8 hours, or high for 3-4 hours, until the chicken is tender and fully cooked (165°F/74°C).
  7. Taste and adjust seasoning with salt or lime juice, if needed.
  8. Warm the tortillas and spoon the chicken and veggie mixture inside. Add your favorite toppings, fold, and enjoy!
