A nostalgic treat with a modern twist, these Muddy Buddies are packed with protein and perfect for any occasion.

  • 6 cups Rice Chex cereal
  • 1 scoop protein powder (vanilla or chocolate)
  • 1/2 cup peanut butter (natural, creamy)
  • 1 cup dark chocolate chips
  • 2 tablespoons coconut oil
  • 1 cup powdered sugar
  • Pinch of salt

Instructions

  1. Measure out 6 cups of Rice Chex cereal into a large mixing bowl and set aside.
  2. In a microwave-safe bowl, combine 1/2 cup of peanut butter, 1 cup of dark chocolate chips, and 2 tablespoons of coconut oil. Microwave in 30-second intervals, stirring after each, until fully melted and smooth (about 1-2 minutes total).
  3. Remove the chocolate mixture from the microwave and stir in 1 scoop of protein powder. Mix until fully combined.
  4. Pour the chocolate-peanut butter mixture over the Rice Chex cereal. Using a rubber spatula, gently fold the mixture until all the cereal is coated evenly.
  5. Transfer the coated cereal into a large Ziploc bag. Add 1 cup of powdered sugar and a pinch of salt. Seal the bag tightly and shake until the powdered sugar is evenly distributed.
  6. Spread the Muddy Buddies onto a baking sheet lined with parchment paper to cool and set for about 15-20 minutes.
  7. Once cooled, transfer the Muddy Buddies into a serving bowl or serve directly from the bag.

Notes

For a nut-free version, use sunflower butter instead of peanut butter. Customize sweetness by reducing powdered sugar and adding more protein powder. Store in an airtight container for up to 5 days at room temperature or 2 weeks in the fridge.
