This brown sugar bourbon glazed ham is the dish that makes you look like you spent all day in the kitchen. It’s sweet, smoky, and boozy with a sticky, glossy crust that everyone fights over.

  • 1 (8-10 pound) bone-in fully cooked ham, spiral-cut or whole
  • 1 cup packed dark brown sugar
  • 1/2 cup bourbon
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons unsalted butter
  • 1 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Whole cloves for studding (optional)

Instructions

  1. Take the ham out of the fridge about 1 hour before cooking. Remove packaging, rinse quickly under cold water, and pat dry. Place flat-side down in a roasting pan.
  2. Score the surface of the ham in a diamond pattern about 1/4 inch deep. If using whole cloves, press one into the center of each diamond.
  3. In a small saucepan over medium heat, combine brown sugar, bourbon, honey, Dijon mustard, butter, ground cloves, cinnamon, and nutmeg. Whisk until butter melts and sugar dissolves, about 3-4 minutes. Remove from heat and let cool for 5 minutes.
  4. Preheat oven to 325°F. Brush about one-third of the glaze over the entire surface of the ham. Cover loosely with aluminum foil.
  5. Bake for 1 hour. Remove foil and brush on another third of the glaze. Return to oven, uncovered, and bake for another 30 minutes.
  6. Brush on remaining glaze. Increase oven temperature to 400°F and bake for 15-20 minutes, watching closely until glaze is dark amber and caramelized. If it starts to look too dark, tent with foil.
  7. Remove from oven and let rest for 15-20 minutes, covered loosely with foil. Transfer to a cutting board, spoon pan juices over the top, slice, and serve.

Notes

The ham is fully cooked, so you’re just reheating it. Don’t overcook; use a meat thermometer and pull it out at 140°F. Apply glaze in three layers for a thick, caramelized crust. Let the ham rest for 15-20 minutes before slicing to keep it juicy.
