  • 1 lb breakfast sausage (mild pork or turkey)
  • 32 oz frozen diced hash browns (do not thaw)
  • 8 large eggs
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, grated
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 2 tbsp butter (for greasing)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter.
  2. Cook the breakfast sausage in a large skillet over medium heat until browned; drain excess grease if necessary.
  3. In the same skillet, sauté the diced onion and minced garlic for 2-3 minutes until translucent.
  4. In a large bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth.
  5. Stir the cooked sausage, onion, and garlic mixture into the egg base, then fold in half of the shredded cheese.
  6. Spread the frozen hash browns evenly into the bottom of the prepared baking dish.
  7. Pour the egg and sausage mixture over the hash browns, pressing down gently to submerge the potatoes.
  8. Sprinkle the remaining cheese evenly over the top.
  9. Bake for 45-50 minutes until the top is golden brown and the center is set.
  10. Let the casserole rest for 10 minutes before slicing and serving.

Notes

Do not thaw the hash browns; frozen ones release less water and crisp better. Press the potatoes down firmly to ensure even cooking. If the top browns too quickly, cover loosely with foil. Let the casserole rest for 10 minutes to allow the eggs to set for cleaner slicing.
