  • 1 tsp vanilla extract
  • ½ cup buttermilk

  • 1 ½ tsp ground cinnamon (for coating)
  • 2 tbsp butter, melted (for coating)

Instructions

  1. Pour 2 cups of apple cider into a saucepan over medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer until it reduces to about 1 cup (syrupy consistency). Let cool completely.
  2. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease thoroughly.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon.
  4. In a large bowl, beat the softened butter and ¾ cup sugar until light and fluffy.
  5. Beat in the eggs one at a time, then add the vanilla extract.
  6. Add the cooled reduced cider and buttermilk to the butter mixture. Mix until just combined.
  7. Gently fold in the dry ingredients until no streaks of flour remain. Do not overmix.
  8. Divide the batter evenly among the 12 muffin cups, filling them about ¾ full.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let muffins cool in the pan for 5 minutes.
  11. Melt the 2 tablespoons of butter. Brush the tops of the warm muffins with melted butter.
  12. Mix ½ cup sugar with 1 ½ teaspoons cinnamon. Roll the buttered tops in the sugar mixture until fully coated.

Notes

Ensure the cider is reduced to concentrate flavor and remove excess water. Use room temperature ingredients for better emulsification. Do not overmix the batter to avoid tough muffins. Coat muffins while they are warm but not hot to ensure the sugar sticks properly.
