This creamy corn casserole with Jiffy cornbread and sharp cheddar is the perfect side dish for any occasion. It features a golden, slightly crunchy cornbread topping and a luscious, custard-like center that’s pure comfort food.

Ingredients

Scale
  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) cream-style corn
  • 1 cup sour cream
  • ½ cup unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 ½ cups sharp cheddar cheese, shredded (divided: 1 cup for batter, ½ cup for topping)
  • ¼ cup diced jalapeños (optional)
  • ¼ cup chopped green onions (optional)
  • ½ teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the two eggs until light and frothy, about 30 seconds.
  3. Add the melted butter to the eggs and whisk until combined. Ensure the butter is warm but not hot to avoid scrambling the eggs.
  4. Stir in the sour cream until the mixture is smooth and creamy.
  5. Add both cans of corn (drained whole kernel corn and cream-style corn). Stir until well distributed.
  6. Pour in the Jiffy corn muffin mix and stir until just combined. A few small lumps are fine; do not overmix.
  7. Fold in 1 cup of the shredded sharp cheddar cheese, reserving the remaining ½ cup for the top.
  8. Pour the batter into the prepared baking dish and spread evenly. Gently tap the dish on the counter to release air bubbles.
  9. Sprinkle the remaining ½ cup of cheddar cheese evenly over the top.
  10. Bake for 45-50 minutes, or until the top is golden brown and the center is set. The edges should pull away from the sides slightly, and a toothpick inserted in the center should come out clean or with a few moist crumbs.
  11. Let the casserole cool for at least 10-15 minutes before serving. This allows it to set properly.

Notes

For best results, use room temperature ingredients. Shred your own cheddar cheese from a block for smoother melting. Do not overmix the batter to avoid a tough texture. Let the casserole rest for 10-15 minutes after baking to set properly. To make ahead, assemble the casserole, cover, and refrigerate for up to 24 hours before baking; add 10-15 minutes to the baking time.
