These creamy, garlicky slow cooker mashed potatoes are the ultimate comfort food. Roasted garlic adds sweet, nutty flavor, and the slow cooker makes them incredibly smooth and easy to prepare.

Ingredients

Scale
  • 3 pounds Yukon Gold potatoes, peeled and cut into 2-inch chunks
  • 1 whole head of garlic
  • 1 tablespoon olive oil
  • 4 cups low-sodium chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsalted butter, softened
  • 1/2 cup heavy cream or whole milk, warmed
  • 2 ounces cream cheese, softened
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap tightly in foil, and roast for 35-40 minutes until soft and golden. Let cool slightly, then squeeze out the roasted garlic cloves. Set aside.
  2. Peel potatoes and cut into 2-inch chunks. Rinse in cold water to remove excess starch.
  3. Place potato chunks in the slow cooker. Add roasted garlic cloves, salt, pepper, and pour in the broth. The broth should mostly cover the potatoes; add a little water if needed.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2.5-3 hours, until potatoes are fork-tender.
  5. Carefully drain the potatoes, reserving about 1/2 cup of the cooking liquid. Return potatoes to the slow cooker.
  6. Add softened butter, cream cheese, and warm cream. Mash until smooth, adding reserved cooking liquid a little at a time until desired consistency is reached. Taste and adjust salt and pepper.
  7. Switch slow cooker to WARM setting. Potatoes can sit for up to 2 hours. Stir occasionally before serving. Garnish with fresh chives or parsley if desired.

Notes

Roast the garlic ahead of time and store in the fridge for up to a week. For dairy-free, use vegan butter, oat milk, and omit cream cheese. For a lower-carb option, swap half the potatoes with cauliflower florets. Don’t overmix to avoid gluey texture. Warm dairy before adding to keep potatoes hot.
