  • 1 cup all-purpose flour (spooned and leveled)
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda

  • 1 cup buttermilk (shaken well)
  • 2 large eggs (room temperature)
  • 1/3 cup honey (mild, like clover or orange blossom)
  • 1/4 cup unsalted butter (melted and slightly cooled, plus extra for skillet)
  • 1/2 cup unsalted butter (softened, for honey butter)
  • 2 tablespoons honey (for honey butter)
  • Pinch of flaky sea salt (optional, for honey butter)

Instructions

  1. Preheat your oven to 400°F (200°C). Place your cast iron skillet inside while it preheats.
  2. Make the honey butter: In a small bowl, combine the softened butter, honey, and a pinch of flaky salt. Mash together with a fork until smooth and creamy. Set aside at room temperature.
  3. Whisk the dry ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
  4. Mix the wet ingredients: In a separate medium bowl, whisk together the buttermilk, eggs, honey, and melted butter until well combined and slightly frothy.
  5. Combine wet and dry: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. A few lumps are fine.
  6. Carefully remove the hot skillet from the oven. Add about 1 tablespoon of butter to the skillet and swirl until it melts and sizzles.
  7. Pour the batter into the hot skillet. It should sizzle and hiss. Spread evenly with the spatula.
  8. Bake for 18 to 22 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let cool for 5 minutes in the skillet. Then invert onto a cooling rack or cutting board, or serve directly from the skillet.
  10. Slather with honey butter while still warm.

Preheat the skillet thoroughly for at least 15 minutes. Use room temperature ingredients. Don’t overmix the batter. Trust the sizzle when pouring batter into the hot skillet. Check for doneness early to avoid overbaking.
