  • 2 large eggs, room temperature
  • 1 cup plain dried breadcrumbs
  • 1/2 cup whole milk
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small saucepan over medium heat, combine ketchup, brown sugar, apple cider vinegar, mustard, garlic powder, and smoked paprika. Stir for 3-5 minutes until sugar dissolves and mixture thickens. Remove from heat.
  3. Finely dice the onion and mince the garlic.
  4. In a large mixing bowl, whisk together eggs, milk, and Worcestershire sauce.
  5. Add ground beef, breadcrumbs, diced onion, minced garlic, dried parsley, salt, and black pepper to the wet ingredients. Mix gently with hands until just combined; do not overmix.
  6. Transfer mixture to a 9×5 inch loaf pan, pressing down firmly and smoothing the top.
  7. Bake for 45 minutes. Internal temperature should reach approximately 150°F (65°C).
  8. Remove from oven and brush half of the warm glaze over the top. Return to oven and bake for 15-20 minutes until internal temperature reaches 160°F (71°C).
  9. Remove from oven, brush remaining glaze over the top, and let rest in the pan for 10 minutes before slicing.

Notes

Do not overmix the meat to avoid a tough texture. Adding the glaze in the last 20 minutes prevents burning. Letting the loaf rest for 10 minutes is crucial to retain juices. For a gluten-free version, swap breadcrumbs for gluten-free panko or almond flour.
