  • 1 cup (120 g) powdered sugar
  • 1 tablespoon pure maple syrup
  • ½ teaspoon ground cinnamon
  • 12 tablespoons (1530 ml) milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray and lightly dust with flour.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, salt, and granulated sugar.
  3. In another bowl, whisk apple cider, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold together until just combined; a few lumps are okay.
  5. Pour the batter into the prepared loaf pan and smooth the top lightly.
  6. Bake for 50-60 minutes, checking at 50 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  7. Cool the bread in the pan for 15 minutes, then transfer to a cooling rack.
  8. To make the glaze, melt the butter in a small saucepan over medium heat, swirling until it foams and turns golden brown with a nutty aroma (about 4-5 minutes). Remove from heat immediately.
  9. Whisk the browned butter with powdered sugar, maple syrup, cinnamon, and 1 tablespoon milk; add more milk a teaspoon at a time if glaze is too thick.
  10. Drizzle the glaze generously over the cooled bread and let it sit for 10 minutes to set slightly before serving.

Notes

Avoid overmixing the batter to keep the bread tender. Use fresh-pressed apple cider for best flavor. Brown the butter carefully to avoid burning. Cool the bread before glazing to prevent the glaze from melting off. The glaze can be warmed gently if it hardens too much.
