Instructions

  1. Brown the butter: Melt 1/2 cup unsalted butter in a medium saucepan over medium heat, stirring frequently until golden brown and nutty aroma appears (4-5 minutes). Remove from heat and cool about 10 minutes.
  2. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper if desired.
  3. Mix dry ingredients: In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. Set aside.
  4. Prepare streusel topping: In a small bowl, combine 1/2 cup chopped walnuts, 1/4 cup light brown sugar, 1 teaspoon cinnamon, and 2 tablespoons flour. Cut in 2 tablespoons cold cubed butter until mixture resembles coarse crumbs. Set aside.
  5. Combine wet ingredients: In a large bowl, mash bananas until smooth but slightly chunky. Add browned butter, granulated sugar, brown sugar, eggs, and vanilla extract. Whisk until well combined and glossy.
  6. Fold dry ingredients into wet in two additions, folding gently until just combined. Do not overmix.
