  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) packed brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1½ cups grated ripe carrots
  • ½ cup (60g) chopped walnuts or pecans (optional)
  • ¼ cup (60g) crushed pineapple, drained (optional)
  • ½ cup (113g) unsalted butter for filling, browned
  • 4 oz (113g) cream cheese, softened
  • 1½ cups (180g) powdered sugar
  • 1 tsp vanilla extract (for filling)
  • A pinch of salt (for filling)

Instructions

  1. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  2. Using a mixer, beat softened butter with brown sugar and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in egg and vanilla extract until just combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until no dry spots remain.
  5. Fold in grated carrots and optional walnuts or pecans and crushed pineapple if using.
  6. Cover the dough and chill in the refrigerator for about 30 minutes.
  7. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  8. Scoop dough into tablespoon-sized balls and place 2 inches apart on baking sheets. Flatten slightly with palm or bottom of a glass.
  9. Bake for 12-14 minutes until edges are golden and centers look set but soft.
  10. Cool cookies completely on wire racks before assembling.
  11. To make filling, melt butter in a small saucepan over medium heat until golden brown and fragrant, about 5 minutes. Remove from heat and cool slightly.
  12. Beat cream cheese with browned butter, then gradually add powdered sugar, vanilla extract, and salt. Beat until smooth and creamy.
  13. Spread or pipe about 1 tablespoon of filling onto the flat side of one cookie, then top with another cookie to form a sandwich. Press gently.
  14. Chill assembled cookies in the refrigerator for at least 30 minutes to set the filling before serving.

Notes

Chill the dough to help cookies keep their shape. Watch the brown butter carefully to avoid burning. Use finely grated carrots for even texture. If filling is too soft, chill before assembling. A cookie scoop helps with even sizing. Cookies continue to set as they cool; remove from oven when edges are golden but centers still soft.
