A warm, comforting, and hearty chicken casserole with creamy sauce, tender chicken, and bubbly cheese. Perfect for chilly evenings or potlucks.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 12 ounces egg noodles
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream (or Greek yogurt for a lighter option)
  • 2 cups shredded cheddar cheese
  • 2 cups frozen mixed vegetables (peas, carrots, green beans)
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat the oven to 375Β°F (190Β°C).
  2. Bring a large pot of salted water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.
  3. In a large mixing bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, salt, and pepper. Whisk until smooth.
  4. Stir in the shredded chicken and frozen mixed vegetables until evenly coated in the sauce.
  5. Fold in the cooked egg noodles, ensuring everything is mixed well.
  6. Transfer the mixture to a greased 9×13 casserole dish. Spread evenly and top with shredded cheddar cheese.
  7. Optional: Sprinkle breadcrumbs over the cheese for added crunch.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let the casserole rest for 5 minutes before serving.

Notes

For a lighter option, use Greek yogurt instead of sour cream. Add crispy bacon bits to the breadcrumb topping for extra flavor. Adjust seasoning to taste before baking.
