A simple, comforting apple crisp featuring tender cinnamon-spiced apples and a crunchy oat streusel topping. This easy-to-make dessert comes together in one dish and is perfect for fall gatherings or weeknight treats.

Ingredients

Scale
  • 6–7 medium apples (mix of Honeycrisp and Granny Smith), peeled and sliced 1/4 inch thick
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar (for filling)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger (optional)
  • 2 tablespoons cornstarch
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar (for topping)
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Peel, core, and slice apples into 1/4-inch thick wedges. Place in a large bowl and toss with lemon juice.
  3. Add granulated sugar, 1/4 cup brown sugar, cinnamon, nutmeg, ginger, and cornstarch to the apples. Toss to coat evenly and let sit for 5 minutes.
  4. In a separate large bowl, combine oats, flour, 1/2 cup brown sugar, and salt. Add cold cubed butter and work it in with fingers or a pastry cutter until the mixture resembles coarse crumbs with pea-sized clumps.
  5. Pour the spiced apple mixture into the prepared baking dish and spread evenly. Sprinkle the oat streusel topping over the apples without pressing down.
  6. Bake for 45-50 minutes, or until the topping is golden brown and juices are bubbling. Tent with foil if browning too quickly.
  7. Cool for 15-20 minutes before serving to allow juices to thicken. Serve warm with ice cream or whipped cream.

Notes

Use cold butter for the topping to ensure a crunchy texture rather than a cake-like consistency. A mix of tart (Granny Smith) and sweet (Honeycrisp) apples provides the best flavor and texture balance. Let the crisp cool for at least 15 minutes before serving to prevent a runny dessert. For a gluten-free version, use certified gluten-free oats and a 1:1 gluten-free flour blend.
