A comforting slow-cooked beef and noodles dish perfect for cozy dinners, featuring tender beef chuck roast simmered in rich gravy with egg noodles.

Ingredients

Scale
  • 2 pounds beef chuck roast, trimmed and cut into chunks
  • 4 cups beef broth (low-sodium preferred)
  • 12 ounces egg noodles (wide noodles)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, peeled and chopped (optional)
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1/4 cup all-purpose flour (30 grams)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Pat the beef chuck chunks dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef chunks in batches until deep golden on all sides, about 3-4 minutes per batch. Transfer browned beef to the crockpot.
  3. In the same skillet, sauté diced onions, carrots, and garlic until softened and fragrant, about 5 minutes. Stir in tomato paste and cook for another minute.
  4. Deglaze the skillet with a splash of beef broth, scraping up browned bits, then pour everything into the crockpot.
  5. Add the remaining beef broth and Worcestershire sauce to the crockpot and stir gently to combine.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours until beef is fork-tender.
  7. About 30 minutes before serving, cook egg noodles according to package instructions until just al dente. Drain and set aside.
  8. Whisk flour with a few tablespoons of cold water to make a slurry. Stir into the crockpot mixture and cook on high for another 20-30 minutes until the sauce thickens.
  9. Add the cooked noodles to the crockpot and stir gently to coat.
  10. Taste and adjust seasoning with salt and pepper. Sprinkle chopped parsley on top for garnish.
  11. Serve warm.

Notes

Brown the beef in batches to ensure proper caramelization and flavor. Cook noodles separately until just al dente to avoid mushiness. If sauce is too thick, add a splash of beef broth or water. For gluten-free, substitute flour with cornstarch and use gluten-free noodles.
