  • 1 cup (240 ml) eggnog, room temperature
  • 1/2 cup (120 ml) vegetable oil
  • 3 large eggs, room temperature
  • 1 package (3.4 oz / 96g) vanilla instant pudding mix
  • 1 teaspoon vanilla extract
  • 1 teaspoon freshly grated nutmeg
  • 1/2 teaspoon cinnamon
  • 1 cup (120 g) powdered sugar, sifted
  • 2–3 tablespoons milk
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Generously spray a 10-12 inch bundt pan with baking spray containing flour, ensuring all crevices are coated.
  2. In a large bowl, whisk together the yellow cake mix and instant vanilla pudding mix until well combined.
  3. Add the eggs, vegetable oil, eggnog, and vanilla extract to the dry ingredients. Mix on low speed or by hand until just combined. Do not overmix.
  4. Gently fold in the nutmeg and cinnamon using a rubber spatula until evenly distributed.
  5. Pour the batter into the prepared bundt pan and smooth the top. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  7. While the cake cools, melt the butter. Whisk in the powdered sugar and milk until a smooth, pourable glaze forms.
