  • 1 teaspoon pure vanilla extract
  • Marshmallows (large and mini)
  • Whipped cream

Instructions

  1. Combine milk, heavy cream, cocoa powder, sugar, and salt in a large heavy-bottomed pot or slow cooker. Whisk gently until uniform and no clumps remain.
  2. Place the pot over medium-low heat. Stir constantly with a silicone spatula or wooden spoon, warming the milk gradually until small bubbles appear around the edges. Do not boil. (10-15 minutes)
  3. Once hot and steaming, remove from heat (if stovetop) or turn slow cooker to high. Stir in semi-sweet chocolate chips until completely melted and smooth. (3-5 minutes)
  4. Stir in vanilla extract. Taste and adjust sweetness or saltiness if needed.
  5. While the cocoa heats, set out serving mugs and arrange toppings in small bowls or jars.
  6. Keep the cocoa warm on the ‘Warm’ setting (slow cooker) or transfer to a thermos/insulated pitcher (stovetop) to maintain temperature.

Avoid boiling the milk to prevent scorching or separation. Mix cocoa powder with cold milk first or whisk vigorously in warm milk to prevent clumping. Use a heavy-bottomed pot to ensure even heating.
