A quick, creamy, and festive fall chili made with pumpkin puree and black beans. This vegetarian dish is perfect for busy weeknights or Halloween parties, offering a rich, comforting flavor that is ready in under 30 minutes.

  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon ground cinnamon
  • 1 (15-ounce) can 100% pure pumpkin puree
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (14-ounce) carton vegetable or chicken broth
  • 1 tablespoon lime juice
  • Salt and black pepper to taste

Instructions

  1. Heat the oil in a large pot over medium heat. Add the diced onion and cook for about 5 minutes until translucent and soft.
  2. Add the minced garlic in the last minute of cooking, stirring until fragrant but not browned.
  3. Add the chili powder, cumin, smoked paprika, and cinnamon to the pot. Stir constantly for about 1 minute to bloom the spices.
  4. Pour in the pumpkin puree, diced tomatoes, rinsed black beans, and broth. Stir until the pumpkin is fully incorporated.
  5. Bring the mixture to a gentle simmer, then reduce heat to low. Simmer uncovered for 15-20 minutes, stirring every 5 minutes, until thickened.
  6. Remove from heat and stir in the lime juice.
  7. Season with salt and black pepper to taste. Let rest for 5 minutes before serving.

Notes

Ensure you use 100% pure pumpkin puree, not pumpkin pie filling. Rinse beans thoroughly to remove excess sodium. The chili tastes better the next day. For a vegan option, skip cheese toppings or use vegan alternatives. Can be made in a slow cooker on low for 6-8 hours.
