  • ½ teaspoon salt
  • ½ cup (113 g) unsalted butter, melted
  • ½ cup (100 g) brown sugar

  • 1 teaspoon vanilla extract
  • 4 ounces (115 g) dark chocolate, chopped
  • ½ cup (60 g) walnuts, chopped and toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or line it with parchment paper.
  2. Toast the chopped walnuts on a baking sheet in the oven for 5-7 minutes, watching carefully to avoid burning.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. In a large bowl, whisk the melted butter with brown and granulated sugar until blended. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract, mashed bananas, and pumpkin puree until rich and aromatic.
  6. Gradually fold the dry flour mixture into the wet ingredients gently with a spatula until just combined; avoid overmixing.
  7. Fold in all but a small handful of the toasted walnuts, reserving some for topping.
  8. Melt the chopped dark chocolate gently over simmering water or in short microwave bursts, stirring frequently.
  9. Drop spoonfuls of melted chocolate over the batter in the loaf pan and swirl gently with a skewer or knife to create ribbons.
  10. Sprinkle the remaining walnuts over the top.
  11. Bake for 55-65 minutes, starting to check at 55 minutes with a toothpick; it should come out with a few moist crumbs but no wet batter.
  12. Cool the bread in the pan for 15 minutes, then transfer to a cooling rack to cool completely.
