Cozy Sausage Potato Kale Soup – Easy One-Pot Meal

A hearty and comforting one-pot soup made with savory Italian sausage, tender Yukon Gold potatoes, and curly kale in a rich, garlicky broth. Perfect for chilly days and meal prep.

  • 3 cloves garlic, minced
  • 1 pound mild or spicy Italian sausage, casings removed
  • ½ teaspoon red pepper flakes (optional)

  • ½ teaspoon dried rosemary
  • 6 cups low-sodium chicken broth
  • 1 ½ pounds Yukon Gold potatoes, scrubbed and cut into ½-inch cubes (about 4 medium potatoes)
  • 1 bay leaf
  • 1 large bunch curly kale, stems removed and leaves chopped (about 5 cups packed)
  • Salt and freshly ground black pepper, to taste
  • ½ cup heavy cream (optional)
  • Freshly grated Parmesan cheese (for serving)
  • Crusty bread or garlic toast (for serving)
  • Fresh parsley, chopped (for serving)

Instructions

  1. Prep your ingredients first. Dice the onion, mince the garlic, chop the kale, and cube the potatoes. (Pro tip: keep the potato cubes in a bowl of cold water so they don’t oxidize and turn brown.)
  2. Heat the olive oil in your Dutch oven over medium-high heat. Once it shimmers, add the Italian sausage (casings removed). Break it up with your wooden spoon and let it cook undisturbed for 3-4 minutes—you want a deep brown crust. Stir and continue cooking until the sausage is fully browned and crispy in spots, about 6-8 minutes total.
  3. Remove the sausage with a slotted spoon and set it aside on a plate. Leave the rendered fat in the pot.
  4. Add the diced onion to the pot and cook over medium heat, scraping up all those browned bits from the bottom. Cook until the onion is soft and translucent, about 5 minutes. If the pot looks dry, add a splash of the chicken broth.
  5. Stir in the minced garlic, red pepper flakes (if using), dried thyme, and dried rosemary. Cook for 30 seconds until fragrant—don’t let the garlic burn.
  6. Pour in the chicken broth and add the cubed potatoes and bay leaf. Bring the soup to a boil, then reduce the heat to a gentle simmer. Cover and cook for 15-20 minutes, until the potatoes are tender when pierced with a fork but not falling apart.
  7. Return the browned sausage to the pot. Add about three-quarters of the chopped kale (reserve the rest for later). Stir well and let it simmer uncovered for 5 minutes, until the kale has wilted into the broth.
  8. Taste and season with salt and pepper. Remember: the sausage is already salty, so go easy on the salt at first. Add the remaining kale and stir until just wilted—this keeps some texture and color in the soup.
  9. If using heavy cream, stir it in now and let the soup simmer for 2 more minutes. Don’t boil the cream or it might separate.
  10. Remove the bay leaf and discard. Ladle the soup into bowls, top with freshly grated Parmesan and a sprinkle of fresh parsley, and serve with crusty bread for dipping.

Notes

For best flavor, use full-fat pork Italian sausage and don’t rush the browning. Add kale in two stages for better texture. The soup tastes even better the next day. To make dairy-free, omit cream and Parmesan. For a lower-sodium version, use no-salt-added broth and low-sodium sausage.
