Cozy Slow Cooker Loaded Baked Potato Soup (Easy & Creamy)

This cozy slow cooker loaded baked potato soup is proof that simple can be spectacular. No stirring, no fussing, no standing over a hot stove. Just dump, set, and come back to the kind of dinner that makes you want to curl up on the couch and never leave.

  • 6 medium russet potatoes, peeled and diced into 1-inch cubes
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened and cubed
  • 2 cups sharp cheddar cheese, shredded (divided)
  • 8 slices bacon, cooked and crumbled
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Green onions for garnish
  • Sour cream for serving (optional)

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain. Once cool, crumble or chop into small pieces. Set aside.
  2. Pour off all but 1 tablespoon of bacon fat from the skillet (or discard and use butter). Add the diced onion and cook over medium heat until softened, about 4-5 minutes. Add the minced garlic and cook for 30 seconds more until fragrant.
  3. While the onions cook, peel the potatoes and dice them into 1-inch cubes.
  4. Add the diced potatoes to the slow cooker. Top with the sautéed onion and garlic. Add the butter (cut into small pieces), salt, and pepper. Pour in the chicken broth. Stir gently to combine.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are fork-tender and starting to break apart.
  6. Once the potatoes are tender, add the softened cream cheese (cubed) and heavy cream. Stir gently until the cream cheese melts completely, about 2-3 minutes.
  7. Add 1.5 cups of the shredded cheddar cheese (reserve the remaining 1/2 cup for topping). Stir until the cheese is fully melted and the soup is smooth and creamy. Taste and adjust salt and pepper as needed.
  8. If the soup seems too thin, use a potato masher to gently mash some of the potatoes right in the slow cooker to thicken it naturally.
  9. Ladle the soup into bowls. Top with the reserved shredded cheddar, crumbled bacon, sliced green onions, and a dollop of sour cream if desired. Serve immediately.

Notes

The soup thickens significantly as it cools. If reheating leftovers, add a splash of broth or milk to thin it back to your preferred consistency. For best results, use room temperature cream cheese and shred your own cheddar cheese.
