A rich, velvety hot chocolate infused with cinnamon and a gentle kick of cayenne pepper. This easy 15-minute recipe uses real dark chocolate and bloomed spices for a complex, comforting flavor profile.

  • 1/4 cup heavy cream
  • 4 ounces dark chocolate bars (70% cocoa or higher), chopped finely
  • 1 tablespoon unsweetened cocoa powder
  • 1 whole cinnamon stick (or 1/2 teaspoon ground cinnamon)
  • 1/8 to 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon pure vanilla extract
  • 2–3 tablespoons sugar, honey, or maple syrup
  • Pinch of flaky sea salt

Instructions

  1. Pour milk and heavy cream into a medium saucepan over medium-low heat. Add the cinnamon stick and cayenne pepper. Stir gently to combine.
  2. Warm the milk slowly until steaming with small bubbles forming around the edges; do not boil.
  3. Turn off the heat and let the mixture sit for 2 minutes to allow the spices to bloom and release their oils.
  4. Turn heat back to low. Add chopped dark chocolate and cocoa powder. Whisk constantly until the chocolate is completely melted and the mixture is smooth and glossy.
  5. Stir in sweetener and vanilla extract. Taste and adjust sweetness or spice level as desired.
  6. Remove from heat. Remove cinnamon stick if used. Strain through a fine-mesh sieve into mugs to catch spice particles.
  7. Serve immediately, optionally topped with whipped cream and a pinch of cinnamon or cayenne.

Notes

Use high-quality dark chocolate bars rather than chips for better melting and texture. Blooming the spices in warm milk before adding chocolate enhances flavor. For a dairy-free version, substitute milk and cream with oat or coconut milk. Adjust cayenne to taste; start with 1/8 teaspoon for mild heat.
