Cozy Witch Finger Veggie Tray with Green Goddess Dip

A fun and festive Halloween veggie tray featuring green beans shaped like witch fingers with almond fingernails, served with a creamy, herb-packed Green Goddess dip. Quick to assemble and perfect for parties or a cozy night in.

  • 2 cups fresh green beans, trimmed
  • 1 large English cucumber, sliced into thin rounds
  • 1/4 cup almond slices
  • 1 medium red bell pepper, cut into small triangles
  • 2 medium carrots, cut into thin strips
  • 3 celery stalks, cut into 3-inch pieces
  • 1 cup cherry tomatoes (optional)
  • 1 cup plain Greek yogurt, full-fat
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh dill, chopped
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 small garlic clove, minced
  • 1/2 teaspoon anchovy paste (or 1 anchovy fillet, minced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Make the Green Goddess Dip: In a food processor, combine Greek yogurt, parsley, chives, dill, lemon juice, garlic, anchovy paste, salt, and pepper. Pulse until smooth, scraping down sides once or twice. Taste and adjust seasoning. Transfer to a serving bowl and refrigerate.
  2. Prepare the green beans: Wash and trim stem ends. Pat completely dry. Arrange in small bundles of 4-5 beans each.
  3. Create the fingernails: Gently press each almond slice into the tip of a green bean, angled slightly upward. Use a tiny dab of dip as ‘glue’ if needed. Repeat for all beans.
  4. Slice the cucumber: Cut into thin rounds, about 1/4-inch thick, leaving skin on.
  5. Cut the bell pepper: Slice into small triangles or diamond shapes.
  6. Prepare carrots and celery: Cut carrots into thin strips, about 3 inches long. Cut celery into similar lengths. Remove strings from celery if needed.
  7. Assemble the tray: Place dip bowl in center of platter. Arrange green bean ‘witch fingers’ around bowl, pointing outward. Scatter cucumber rounds, carrot strips, celery pieces, and bell pepper triangles around. Add cherry tomatoes in empty spaces.
  8. Final touches: Sprinkle extra almond slices on tray. Serve immediately or refrigerate for up to 2 hours.

Notes

Pat green beans completely dry before adding almond fingernails to prevent slipping. Dip can be made up to 24 hours in advance. Assemble tray no more than 2 hours before serving to prevent sogginess. For dairy-free, use thick coconut yogurt or blended silken tofu. For nut-free, use red bell pepper pieces instead of almonds.
