A spooky yet delicious Halloween appetizer featuring hard-boiled eggs filled with a rich, creamy black bean mixture and topped with olive spider legs. These savory treats are easy to make, naturally gluten-free, and perfect for parties.

  • 6 large hard-boiled eggs
  • 1 can (15 oz) black beans, rinsed and drained thoroughly
  • 1/4 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 jar pimento-stuffed olives, sliced into thin strips for legs
  • Cucumber rounds or lettuce leaves for serving

Instructions

  1. Boil eggs in a pot covered with cold water. Bring to a boil, remove from heat, cover, and let sit for 10-12 minutes. Transfer to an ice bath and cool for 15 minutes.
  2. Peel the cooled eggs under running water. Slice each egg in half lengthwise and scoop out the yolks into a large mixing bowl, keeping the whites intact.
  3. Rinse the black beans thoroughly in a colander until water runs clear and shake off excess water. Pat dry with a paper towel if necessary to ensure they are not wet.
  4. Add the black beans, mayonnaise, mustard, garlic powder, smoked paprika, salt, and pepper to the bowl with the egg yolks. Mash until smooth and creamy. Taste and adjust seasoning.
  5. Slice the pimento-stuffed olives into quarters, then slice each quarter in half lengthwise to create thin strips for spider legs (about 8 legs per spider).
  6. Transfer the bean mixture to a piping bag fitted with a star tip (or a zip-top bag with the corner cut off). Pipe the filling into the egg white halves.
  7. Arrange the olive strips on top of each filled egg to form spider legs. Add a tiny dot of olive or caper for eyes if desired.
  8. Place the assembled spiders on a platter lined with cucumber slices or lettuce. Refrigerate for at least 30 minutes before serving to let flavors meld and filling set.

Notes

Ensure black beans are thoroughly rinsed and dried to prevent a runny filling. Eggs should be at least three days old for easier peeling. For a vegan version, substitute eggs with firm tofu scramble or mashed chickpeas and use vegan mayo. The flavors improve after sitting in the fridge for a day.
