  • 2 cups cooked chicken, shredded or chopped (rotisserie chicken recommended)
  • 8 ounces cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup buffalo sauce
  • 1 to 1 1/2 cups sharp cheddar cheese, shredded
  • 23 green onions, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional toppings: extra cheddar cheese, chopped parsley, or blue cheese crumbles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred your cooked chicken finely, about 2 cups.
  3. In a mixing bowl, combine softened cream cheese with 1/2 cup ranch dressing. Beat or stir until smooth and creamy.
  4. Add 1/2 cup buffalo sauce and mix well.
  5. Stir in shredded chicken, garlic powder, onion powder, salt, and pepper until well incorporated.
  6. Fold in 1 to 1 1/2 cups shredded sharp cheddar cheese and most of the chopped green onions, saving some for garnish.
  7. Transfer the mixture to an 8×8-inch baking dish, spreading evenly.
  8. Top with extra cheddar cheese and sprinkle with remaining green onions.
  9. Bake for 20-25 minutes until bubbly and cheese is melted and slightly browned.
  10. Let cool for 5 minutes before serving.

Notes

If the dip feels too thick before baking, stir in a splash of milk or additional ranch dressing. Watch closely in the last 5 minutes to avoid burning the top. Use room temperature cream cheese for smooth mixing. Can be microwaved briefly to melt cheese before baking for a browned finish. Prepare ahead and refrigerate, then bake before serving for freshness.
