A quick and easy creamy buffalo chicken dip with a spicy tang from buffalo sauce and sharp blue cheese crumbles, perfect for game day or casual gatherings.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 280 g), leftover roast or rotisserie chicken
  • 8 ounces cream cheese (225 g), softened to room temperature
  • 3/4 cup buffalo wing sauce (180 ml), such as Frank’s RedHot
  • 1/2 cup blue cheese crumbles (75 g), plus extra for topping
  • 1/2 cup sour cream (120 g), or Greek yogurt as a tangier alternative
  • 1 cup shredded sharp cheddar cheese (100 g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • Optional garnish: chopped green onions or fresh parsley

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch (20×20 cm) baking dish.
  2. Soften the cream cheese by leaving it at room temperature or microwaving in 10-second bursts until just soft (about 20-30 seconds).
  3. In a mixing bowl, beat the cream cheese until smooth and creamy using an electric mixer or whisk by hand (2-3 minutes).
  4. Add sour cream, buffalo sauce, garlic powder, onion powder, and black pepper. Mix gently until well combined and smooth. Adjust seasoning if needed.
  5. Fold in shredded chicken, shredded cheddar cheese, and 1/2 cup blue cheese crumbles. Stir carefully to distribute evenly without overmixing.
  6. Pour the mixture into the prepared baking dish and smooth the top. Sprinkle an additional 1/4 cup blue cheese crumbles evenly over the surface.
  7. Bake in the preheated oven for 20-25 minutes until hot and bubbly with slightly browned cheese on top.
  8. Remove from oven and let rest for 5 minutes to set slightly.
  9. Garnish with chopped green onions or parsley if desired. Serve warm with tortilla chips, celery sticks, or crackers.

Notes

Softening the cream cheese is essential for a smooth texture. Avoid overmixing after adding chicken and cheese to prevent a runny dip. Use good-quality buffalo sauce like Frank’s RedHot for best flavor. Can be prepared up to 24 hours ahead and baked fresh before serving. Store leftovers in fridge up to 3 days. Reheat gently to maintain creaminess.
